Mixed Seafood Adobo

Ingredients

1/2kilomixedseafood,marinarmix,drained
1/2headgarlic,peeled,crushed,chopped
1smallonion,peeled,chopped
1mediumsizetomato,chopped
1/2tbsp.crackedpeppercorns
2-3pieces,bayleaf
1/3cupwhitevinegar
1/3cupdarksoysauce
Salt
cooking oil

Directions

  1. In a frying pan heat generous amount of cooking oil.
  2. Sauté the garlic, onion and tomato until lumpy.
  3. Add in the peppercorns, bay leaf, white vinegar and soy sauce.
  4. Let simmer at low medium to low heat for 1 to 2 minutes.
  5. Now add in the mixed seafood and continue to cook for 3 to 5 minutes or until most of the liquid has evaporated.
  6. Carefully stirring or turning once in a while.
  7. Correct saltiness if required. Serve with a lot of rice.
