2 lb. pork, cut into serving pieces
5 cloves garlic, crushed
1 cup vinegar
2 tbsp. oil
salt and pepper, to taste
1 ampalaya (bitter melon; bitter gourd), sliced
- In a pot, place the pork, vinegar, crushed garlic, oil, salt and pepper.
- Bring to a boil then simmer until the pork is tender.
- Add the sliced ampalaya and stir just to combine. Cook for 3 to 5 minutes.
- Remove from heat. Serve hot with rice.
